I am one of those people that love kale. Don’t judge. For whatever reason, I love a strong green leaf taste, but I know not everyone is on the kale band wagon. If you’ve been wishing you could like kale, this salad might convert you. All of my friends, that DO NOT like kale, will go back for seconds every time I make this. It’s also quick and easy for cooks of all levels.
Food Processor/Viatamix/Something that chops finely
12oz bag of Kale
1 1/2 cup Grated Parmesan
1/4 cup Olive Oil (eyeball and if dry, add a tablespoon more until desired consistency)
1/2 cup Dried Cranberries
1/4 cup Sunflower seeds
In a food processor, layer a handful of kale, some of the parmesan cheese, kale (again), parmesan…until all is in the container.
Pour over your olive oil.
Close the lid and pulse until all of the kale is finely chopped.
Scoop out into serving dish. Fold in cranberries and sunflower seeds.
